Andrew's Mohawk

I got the pictures from Isaac of Andrew's mohawk. He's a pretty cute kid! I actually like his hair this way. It was so fun to see them when they came up for the weekend.

Engagement Photo Session



I took some engagement photos for a couple in our singles ward tonight. They are getting married in August. It was a lot of fun to be outdoors and play with my new camera. I added them to my flickr site so take a look!





Jewkes come to visit


Here are a few photos of this past weekend. We went to Tory's house for a BBQ when Tallie and Isaac came to visit. Andrew is getting to be so old and big! We haven't seen him since his blessing. It was also fun to see Michelle. She is getting bigger and healthier every day. Tallie put Andrew's hair into a mohawk and when she sends those pictures, I'll have to post them. It was hilarious! I have never seen a baby at three months old with as much hair as Andrew!

Red Fish Lake

We went to Red Fish Lake near Stanley with some friends today to have a picnic. It's about a 2 1/2 hour drive. It was such a pretty drive. The mountains are so green and the water was really blue. The weather was perfect--nice and warm, but the water was freezing! Toby and Eric were the only ones brave enough to wade out and throw rocks. Shalee and I just kept our shoes on and stayed warm. We had a nice picnic and went for a little hike. We should have brought our camping stuff. It would've been a great weekend to go camping. The lake is at the base of the Saw Tooth Mountains. They still had snow on them and they reminded me of the Grand Tetons. Very jagged and sharp but very beautiful. Click here to see the photos.

Cooking Classes

For a mini enrichment, I went to a cooking class that one of the men in our singles ward was teaching. He is an amazing cook and I was really excited to see what he was going to teach us. Toby had him make us a cheesecake for our anniversary. Yes, it's the same cheesecake that I was going to throw at the Wild Racoon if needed be......but good thing we didn't have to do that. And thank goodness! It was the best cheesecake I have ever had!
Anways, we were going to learn about salads. Not the simple green and ranch dressing salads but better ones.
I had a great time! He taught us simple cooking tips and then went through 4 different salads. They were sooooo good! I don't know how to attach the notes and recipes but I really want to share them so this post will just have to a realllllllllly long one. If you want my notes (which are really good and helpful) send me an e-mail or make a comment and I will send them to you with the recipes in an e-mail. The Fire Roasted Corn, Tomato and Basil salad was my favorite! Enjoy!



Albacore, Green Bean, and Roasted Potato Salad

1 ½ pounds fresh French green beans, ends snipped
2 pounds baby red potatoes, halved
1 medium red onion, sliced and separated
2 6 ounce cans Albacore tuna, drained
½ cup olive oil + more for roasting
Fresh juice of 2-3 lemons
¼ cup (roughly) fresh dill, chopped

Start by rubbing baby potatoes and red onion in olive oil to coat, seasoning with salt and pepper, and roasting at 400°until tender (roughly 40 minutes). Set aside and allow to cool. Blanch green beans until bright green and tender, drain, and immediately place in ice water to stop cooking. Place potatoes and green beans in large bowl, and combine with red onion, albacore, and fresh dill. Add lemon juice , and season with salt and pepper to taste.

Fire Roasted Corn, Tomato, and Basil Salad

6 large ears of corn, husks on, soaked in water
5 tablespoons olive oil
½ cup (packed) thinly sliced fresh basil
5 large tomatoes or 10 roma tomatoes, chopped
3 tablespoons balsamic vinegar

Roast ears of corn on open flame, rotating evenly. Do this until husks are charred and kernels are cooked (approx. 10 minutes). Remove from flame and allow to cool for a few minutes. Remove from husks, and slice kernels off cob with a sharp knife. Place kernels in a large bowl, and allow to cool. Add diced tomatoes, and basil. Add olive oil and balsamic vinegar, toss gently, and salt and pepper to taste.

White Beans with Ham, Cilantro, and Mint

1 pound dried white beans (such as Great Northern), cooked, or 3 cans of canned beans
¾ cup diced ham (about 6 ounces)
½ cup chopped fresh mint
½ cup chopped fresh cilantro
½ cup (about) olive oil
¼ cup (about) Sherry wine vinegar or white wine vinegar

Place all ingredients into a large bowl and toss gently. Season salad to taste with salt and pepper. Makes 8 servings

Recipe taken from Bon Appetite cookbook

I like to add 2 cloves of garlic finely chopped and some roasted red onion to the salad for additional flavor and color. Left over salad can be placed in a food processor and processed with fresh lemon juice and olive oil (add enough oil to make a smooth paste), add additional salt to taste, and spread on bruschetta.

Spinach, Pear, and Bacon Salad with Candied Walnuts and Warm Maple
Vinaigrette


1 bunch of spinach, washed, dried, and roots removed
½ pound thick sliced bacon, cut in ¼ inch pieces
1 bosc or red pear, cored and diced
3 large shallots, sliced
Candied walnuts (recipe follows)
1 cup (roughly) pure Maple Syrup
½ cup (roughly) apple cider vinegar
Olive oil (if needed)
Onion powder and fresh cracked black pepper to taste

In a medium sauté pan, brown bacon on medium heat (approx. 6 minutes). Remove bacon from pan, reserving drippings in pan. Add shallots to pan, and cook until soft and lightly brown (approx 3-4 minutes). Deglaze pan with cider vinegar, then add maple syrup and olive oil (if necessary) to pan, whisking to incorporate. Season with onion powder and cracked black pepper, and then return bacon to pan to warm through.
Place spinach, pear, and candied walnuts in large serving bowl, and toss with bacon and the warm vinaigrette. The spinach should slightly wilt from the warm vinaigrette. Serve immediately.

Candied Walnuts
½ pound halved walnuts
½ stick unsalted butter
½ cup (roughly) brown sugar
¼ teaspoon (roughly) cinnamon
Melt butter in sauté pan over medium‐high heat. Add brown sugar, walnuts and cinnamon. Season
with salt and fresh cracked pepper. Cook until sugar has melted , being careful not to burn the sugar.
Stir thoroughly to help sugar cover walnuts. Remove from heat and allow to cool.

Softball Soreness

We had another softball game tonight. No victory but it was still fun. It was really hot and then it downpoured and I felt like we were back in Florida! We were all soaked with rain and sweat. Pretty gross. I got to first and then Toby hit me in. You get such a rush when you are forced to run. We learned tonight that we are waaaaayyy out of shape! I was dead tired when I ran to home plate. I could hardly breathe! Toby wasn't much better. So--we are determined to get back into shape this summer. I didn't have my camera tonight, but someone else did and I'll post the pictures as soon as I get them.


Tomorrow I start my new job-it's supposed to be 90 degrees. I am pretty excited and I'll try to post some photos when I can. It's only training so it might be awhile before I get my own photos. As a side note, family and friends get to raft for free (if there are open spots, which there usually are) so if you are going to be in Boise this summer---let me know! If you're going to be Boise--you had better let us know anyways......

Weekend in Rexburg

This weekend we went with some friends to Rexburg for a quick visit. Eric and Shalee Van Genderen are moving there and wanted to scout around the area for apartments. So, we headed on over and stayed with Toby's parents. We had a great time. We looked for apartments and then headed to Idaho Falls for a yummy dinner and then went bowling! I didn't know how good Toby's mom, Becky was! She came in with second place beating both Toby and his dad. I got over a hundred.....which says a lot because usually I am in the 60's. I made Becky a Mother's Day cake and we were able to go to Sacrament Meeting with them before heading back to Boise. Fast but fun trip! Here are the photos.

Professional Photos














I created a flickr account to show off my professional photos. The baby is Vince Hochhalter, friends of ours from the married student ward. I did a photo shoot with him when he was only three weeks old. It was quite fun! I like working with babies because they are easy to pose and move. Plus, I don't have to talk to them or try too hard to get them to smile! It makes my job a lot easier.
I entered this photo into a photo contest and the grand prize winner gets $10,000! That would be nice! I've made it to the semi-finals so we'll see how it turns out..... Cath Lab Softball


Toby and I are playing on a co-ed city league softball team with the Cath Lab. What a fun and crazy bunch of people! We have games every week and try hard to do our best........most of the time. :) We won for our first time tonight. Toby always does a great job and I am happy just to be out in right field where no one hits the ball. I always get nervous when up to bat and the few times I have hit, I've gotten out but at least I have made contact with the ball. That's always a good thing. The almost attack of the racoon...


A few nights ago, as we were driving into our apartment complex, we happend to see a very large cat. Toby slowed the car down and to my amazement---it wasn't a cat but a racoon! It was crawling under the cars and while it was a pretty animal, I didn't want to get near it.
So the other night, it's dark and we are pulling into a spot in our complex. If you get there late, there isn't a huge choice of where you get to park and we were stuck by the bushes. As we got out of the car, we started to hear some weird noises. Toby was talking to me and said, "I think that's the racoon!" All of sudden, we hear it scraping the tree as it climbed down to charge us! It was on it's hind legs and was going towards Toby. All I could do was scream, "Get back in the car!!!!" I was freaking out. I had a homemade cheesecake (made by some kid in our ward for our anniversary) which I was willing to throw at it in my hands, but I did NOT want to get rid of it. Toby ran to my side of the car and we both jumped in and locked the doors. I am sure we looked quite funny but I didn't want to get killed! So we drove to the other side of the apartment complex and parked. Now I have issues whenever we have to park and it's dark. Stupid Racoon!

The Beginning....


Blogging!?!?! Guess we like to keep up with the Jones.....or the Walker's/Smith's that is! Thought we'd join the band wagon and start blogging our family life.


Here is a quick update:

Wedding Anniversary was on April 26th. 4 years! We went to McCall, Idaho for a quick get-a-way. Very fun. Went ice-skating and were the only ones on the skating rink! Spent the weekend hiking and walking around beautiful Payette lake and just chilling.

Toby is finishing his second semester of grad school and I am starting my courses at the New York Institute of Photography. Very excited and will hopefully start doing more photo shoots!
